Easy Veg Jalfrezi Recipe for Your Diwali Dinner priyanka das Ingredients * 2 tbsp oil * ½ tsp cumin seeds * 1 green chilli * 1 dried red chilli * ¾ cup finely chopped onions * 1 cup tomato puree * 1 tbsp tomato sauce * 1 tsp ginger paste * 1 tsp garlic paste * 1 tsp red chilli powder * 1 tsp coriander powder * ½ tsp cumin powder * ¼ tsp turmeric * 1 tbsp Kasuri methi * 1 tsp garam masala * ½ tsp fennel powder * 1 tsp sugar (optional, adjust to taste) * Mixed vegetables – 400 grams (carrot, beans, capsicum, sweet corn, baby corn, onion, green peas) Heat a pan with oil.

Add cumin seeds and red chilies.

When the seeds splutter, add onions and green chilies.

Saute until golden.

Add ginger and garlic.

Saute for a minute.

Add in red chilli powder, coriander powder, turmeric, and cumin powder.

Mix well.

Next, add tomatoes and let it cook.

Pour water and cook on medium flame.

Let the sauce thicken.

In another pan, stir fry the veggies on high heat.

Cook for 2-3 minutes.

Crush kasuri methi and add it to the pan with the sauce.

Add in salt, sugar, garam masala, and fennel powder.

Add the stir-fried vegetables to the sauce and stir fry on high heat for 1-2 minutes.

Serve hot with parathas, roti, or naan.
